I'm pretty terrible at Naval battles. I'm never able to make a boarding party come off with regularity, and quote often I find myself being rammed in all the wrong places (steady). What do you do in these situations?

I totally do not understand the naval boarding. I have not got it to work at all. Ramming the ships is pretty fun.

If you notice the battering ram under your unit special abilities, if you click it then it will look like a man jumping the railing. You'll notice that when you mouse over enemy units that the icon changes to a gladius instead of a ramhead. When you click on a ship then your unit will attempt to ram & board.

The mechanics of naval combat still need a LOT of work. Not all ships are set for boarding, and switching between units on the fly defaults for ramming even if the unit you have selected is set for boarding. You have to click on the ram/board button twice just to reset it for boarding. The AI isn't very relentless either and boarding actions require an annoying amount of micromanagement to pull off effectively. It really makes naval combat unworkable for multiplayer since so far pausing is the only way to really manage the bad AI.

That is, if you care enough to board. I'm still not certain what advantage boarding has over getting the biggest ships you can with Velites on them to ram and toss flaming projectiles. You can't capture ships anymore, even though it seems like the whole point.

Edit: Maybe the purpose of boarding is that an assault ship of heavy infantry naturally wipes out a capital ship of skirmishers? Haven't been able to test naval combat too much.

Well if there is one thing I have learnt, it is that you do not go trying to ram massive ships with smaller faster ships without a very hardy crew of marines. Otherwise you will only get about one ram in per Trireme if you are successful, after which your ship's crew gets murdered by the large ship's crew of ranged towers and soldiers.
